On my plate steel stove, I can use an IR gun and measure 800 degrees in a small spot right in the center of the top, and 400 degrees in the corners. Is this considered an 800 degrees stove top? I understand that stove top temperature is considered an overfire somewhere above 800-900 F.

Unless your stove manual states otherwise I would measure center top or the highest temp you can find.

My Jotul says to use a corner on the top. I use a magnetic stove top thermometer and an IR gun.

I don't have a top so I zap the flame with IR gun. Cruising temp is 650-750, I don't like when it's above that so just don't load as much and keep it under control.
