Came home to some Vietnamese tonight! Woohoo!

Breakfast for dinner tonight. Extremely alcoholic OJ with a splash of grapefruit. The key is we used our very early season homemade maple syrup. Had a warm spell and got a good run, I made about a pint. Delicious vanilla, caramel, and light maple notes. We're in a cold snap again but I can't wait for the trees to wake back up!

Finished the fermented hot sauces.

The jars with the green (jalapeño, Serrano) and a couple habaneros has been done a couple weeks and I been through two bottles already. Thats the darker bottle.

The orange sauce is mostly habanero, and I just blended it today after about a week and a half of fermentation.

Both are awesome.

That looks great! My morning eyes deceived me with what was in your colander, at first I saw shrimp heads. My mind was asking, is he making his own msg?

Do those ball tops let off extra CO2?

Yes. The rubber ones are like baby bottle nipples for wide jars. They burp themselves. The plastic Ball lid also has a silicone flap that allows it to burp itself.
 
This was last month. Nitrate free smoke “kinda corned” beef. It was a full choice brisket on the smaller side at 8#. Smoked quick at like 5 hours. Very very good IMO.

Then lamb three ways for Easter. That was super good. One each of curry, rosemary garlic, and a pretty plain one with some garlic powder pepper and salt. No finished pictures.

It’s been a long time since I’ve posted on this thread, but I made a new recipe tonight, and it was such a hit with my family that I thought I’d post it here. It’s for a Kashmiri lamb curry, and it’s designed for a pressure cooker. I made a few tweaks to the recipe such as substituting fresh hot peppers for powder and mint for cilantro, fresh tomatoes instead of paste and water. I made those changes based on what’s in our garden right now. I also wanted to have leftovers for our family of seven, so I cut up about four pounds of lamb and doubled the other ingredients, but it worked out really well. The lamb was super flavorful and tender even if the dish isn’t the most photogenic. We ate it over brown rice with a cucumber and yogurt salad on the side.

Since we're in for a bunch of rain starting tonight, I put together some sausage, bell peppers, onions in a red sauce for some meals.

On 8/16/2024, I made some stuff peppers along with making more sauce the day before, there were a total of 16 stuffed peppers.

Next up, I'll try making some Italian bread, it didn't turn out very good last time.

Was the lettuce the wrap or was something else used like a flour tortilla?
 
Sounds delish. We've had lettuce wraps at some Vietnamese restaurants.

This is how I did it. I’d say they were just as good. I forgot to add the little noodles.

 
Thanks! We've never been to a PF Changs so no taste comparison, but it sounds delicious. We'll give it a try. We have fresh garden lettuce and I'm thinking of adding some Thai basil. Are the little noodles crispy or soft?
 
Crispy. I’m not sure what they are. Kinda like a puffed rice noodle of sorts is what it reminds me of.
 
It's good to protect the stove from spatters.

However, that stove has an 11" clearance from the corners. It is much too close. Single wall stove pipe with a heatshield has a clearance of 9" and the shielding must be continuous all the way to the ceiling.
