Stove washer and nut material

I’m looking to adjust my stove’s door latch and replace the nuts while I’m at it

What type of material should I look for for the nuts and washers, zinc, stainless steel, grade 4 etc?

Avoid anything galvanized for sure. Fumes from heating galvanized metal can tune you up something fierce.
