I had my Jotul 602 installed this week. It's in a corner on a hearth pad with proper clearances, according to the manufacturer. Today is our first burn and the paneling to the sides is a bit warm. How can I tell if it's getting too warm?

What temp is “warm”? Are the clearances met? They don’t look bad by eye.
 
The clearances are met with an extra inch. The wall feels fairly warm. How can I tell if it's too warm? Will my stove thermometer work on the wall?

ETA: Going to get an infrared thermometer.

Nice install! Is that the new V3? You should be fine since clearances are met.
 
The F602 is a radiant stove. The adjacent walls will get warm. If you can hold your hand on them for a few seconds then they are ok.
