I'm wondering if maybe you need to let the larger pieces char and get going longer before closing the door and shutting down the air? You can't get the kindling burned down to warm up the flue and stone, then throw in bigger stuff and shut the door. The bigger stuff needs to get going good before shutting it down. This isn't to say the flue isn't an issue, but it might help...
a great suggestion, but this is already what I'm doing. I had a roaring fire going on top of the kindling fire, goes great for 45 minutes, then tonight with the door open, it just flat out went out. My installer says we need to check room pressure first, but they don't do that, and they don't know anyone who does... doesn't want to talk about the flue going from 6 to 8 inches, he says it shouldn't matter.

i'm leaving the door ajar anywhere from 30 to 60 minutes to get the larger fuel burning.
 
That (30+ mins open) generally means your draft is not sufficient for the fuel you are burning.
Given that I believe your fuel is most likely dry enough, it's your draft. Add chimney height as suggested before.
I would do that before I'd change the diameter as adding height in a cheap test is cheaper.
 
Your installer didn't recommend increasing chimney height for more draft and also says going from 6-8" doesn't matter? Time to find and a new installer unfortunately.
 
Check the room pressure by opening a nearby window an inch. If that makes a quick improvement in the fire then it can be addressed with an outside air connection. I suspect it won't make a big difference, but who knows? It's easy to try and see.
