What should be my operating temperature?

Hello all, I’m a beginner with a wood stove insert. I have the regency i2700. Sorry if this is a repeated question but where do I want to keep the temp? What is to hot? Also when I close my bypass I notice the temp spikes up. Does that mean that I will get less burn time?
 
The bypass should be closed as soon as the cat is up to temperature >500º. And yes, it will get hotter. That's by design. Close down the air to extend the burn time and reduce heat output.
