New to pellet stoves just installed a Grand Teton Teewinot in my 1200 sqft cabin with 10 foot ceilings, living room and kitchen open concept with two ceiling fans, three bedrooms enclosed with doors open and ceiling fans. Running stove in the lowest setting P4 and in Eco mode1 temp set at 80° keeps the cabin about 70 to 73°. Is this the best setting or is there a better setting for me to run it more efficiently?

yes you are probably using the best settings.
