I've also noticed if I burn mine at the top of the scale (near red), my stove seems to burn much better.
Just don't worry about going over into the red too much. Mine usually does at least once a day, I just damper and try to keep mine at the top of the scale between orange and red (about 450).
Are there one's that you can read from a distance if it's on the stove top? You know how those maognetic ones sit parallel to what they are "stuck" to.
