I have a Hearthstone Green Mountain 60 for the 3rd season now. I understand the catalyst and temp gauge on the side. What is the proper stovetop operating temperature? I have one of those laser heat guns to measure. I do not see anything in the manual about this. Thanks.
 
Ive got the 80 just fyi.

The top center will be hotter than the top sides, so I really only gage from there. I use an IR gun.

I believe Hearthstone may say something like shouldn't go over 600. I dont know exactly what the hell that means though. However I spent my first two years trying to maintain that and it caused more frustration because I didnt fully grasp how important it was to keep a nice layer of ash in the firebox (even after cleaning out excess ash), also I didnt understand the only air coming into the firebox is from the small hole in the front, bottom, center so clearing small space around there so the front East to West piece allows air to get under it.

When it gets really cold she will normally get between 6 and 700 deg F. Especially if some seasoned hornbeam or Oak finds its way in there. I think 790 was the highest Ive ever seen it.

Thank you. I usually see around 500 from what I remember from last season. I have to keep an eye on it and there's definitely no temps in their manual
 
Yeah hearthstone's 600F is ridiculous. There's no way to keep the top under 600F with a box full of wood with active flames. It's definitely a cover themselves from a warranty perspective thing, or they just kept the same limit from their external soapstone line
