While I initially planned to replace this cracked chimney crown with a poured concrete one already, it looks like that won’t be happening until the spring. Are there any products that are recommended to cover up the cracks so that less moisture gets in between now and then?

Silicone--high temp if you want to feel good about it--but not necessary!
 
Yup, silicone. Not a forever fix, but it’ll move with expansion and contraction due to temperature.
