In the middle of the night, my Ideal Steel wood stove falls below the stove top thermometer's (blackened) 250F minimum recommended temperature range. If I know that it will be 210F or so when I wake up at 3AM to refill it, can I leave the catalyst engaged while I sleep? Read on a different forum that all of the stuff that might clog the catalyst has been baked off by then and it would be OK. Do I have the leave the catalyst non-engaged because it will fall below 250F while I sleep?

You can leave it engaged when temps dip below the cat active range. It’s pretty much in the coaling stage by then and not making any smoke to clog up your cat.

Yes, Todd and the other forum are correct.
