I purchased a Jotul 500 this past September and have performed the three mandatory burns. The third burn went to between 400 and 450 on the corner before I turned the primary air control down.

My questions are, since I am going to be restarting it after this time, do I need to repeat the three burns from 200 to 400 stove top temperatures? Or, should the cast iron be expanded and contracted as designed.?

I know nothing would be damaged by repeating the process but I wish some advice.

Thank you very much.

Three burns should be fine. You're ready to go, though there may be some additional paint baking in smell once the stovetop reaches 500-550F.

You're good to go ... as mentioned you will most likely have a smell when the stove hits higher temps.
