Fan cooling flue gas or just probe ?

To move heat from the woodstove I am experimenting with fan placement. Tried a pedestal fan behind the corner located woodstove for latest trial .
Even on low speed the probe temp Guage drops substantially shortly after fan is turned on . Fan essentially is pointed at flue on opposite side of Guage.
Could I actually be cooling done the flue gas in a double wall pipe that much or is it just the magnetic probe exterior the fan is affecting ?

And you're likely cooling both flue and thermometer. But I think the biggest of the decrease you see is from cooling the coil of the thermometer.
 
One thing to try is to place the fan down low and blow air from a cooler part of the house toward the stove room. This will start a convection loop, cooling the stove room while warming the fan located area.
