Hi,

I am breaking in my Jotul F500 V3. For the first two burn in fires it says we should use the catalyst temperature monitor. For the third it says 500F surface temp. Where should I measure that surface temp?

If it doesn’t state where to place the thermometer in the manual I would just put it dead center top. That will most likely be the hottest part of the stove.

Follow up... what is an okay temperature for the interior? I tried to get the top up to 500 F, but the internal monitor was > 1000 F so I backed off not wanting to overhead the oven
 
That interior temp is the catalytic converter temp. Normal cat temps are about 800-1400. Temps over 1600 can damage the cat.
