I am replacing the gaskets on both the door and the glass edge of my 550. I bought a kit that includes a self adhesive gasket for the glass, but it says you can also apply it with cement. When i removed the old one it did seem like it was on with cement... but that might just be the age (10 years) of the old one and how crispy it was in some areas. Does anyone know if this is supposed to be applied with gasket cement VS self adhesive?

I think the adhesive would be fine. The glass holds it in place after it’s installed. Did you get a Jotul brand kit? If not I just make sure it’s thick enough to seal well.

I bought it from a stove Repair shop who does OEM kits. The instructions say to use cement if there was previously cement. It does seem like there may have been but it's hard to tell , could just be crusty glue that I was scraping.
You're right the glass holds it in place too.
 
Usually the glass doesn't require adhesive in addition to what is on the gasket tape. The adhesive on the tape may be heat sensitive in that it melts for a better adhesion. Center the gasket on the edge of the glass and fold it over the edge of glass on both sides.
