How do probe thermometer temperatures correspond to surface thermometer temperatures

I've never used a probe thermometer so I was wondering if you had both on the same flue at the same location and you had a probe temperature of (for example) 600, what would the surface thermometer likely read?
 
Mine right now dampened down shows surface 350 deg and 575 on the probe.

Full load of wood in secondary burn charred and with pipe dampner closed set to cruise the night for a warm morning :lol:
